Mutter Paneer
For those who love North Indian food, making Mattar Paneer is a fun way to cook that combines soft paneer (paneer paneer) with green peas and tangy tomatoes. The sauce holds it together. To get started with this fun, prepare the following ingredients: cheese (cottage cheese), green beans (fresh or frozen), tomatoes, onion, ginger, garlic, green pepper, cashews, cream, vegetable oil and a mixture of aromatic spices. , along with small fennel seeds, coriander powder, garam masala, turmeric powder, red chili powder and salt.
First, prepare the cheese. Cut into small cubes and gently fry in a small amount of oil until golden brown. Set the hot cheese cubes aside. To enrich the tomatoes, first blanch the tomatoes in boiling water, then peel and wash them until you get smooth tomatoes. Heat some oil in another pan and add cumin seeds. When it sizzles and its aroma comes out, add the chopped onions and sauté until they become transparent. Add ginger, garlic and green chilies, all finely chopped, to add layers of flavor to the base. Now let's move on to the spice mixture: Add coriander powder, turmeric powder, red chili powder and salt. Stir the spices into the onion mixture and cook until the oil begins to separate from the mixture, indicating that the spices are cooked and fragrant.
Pour in the tomato puree and cook until the mixture is well mixed and thickened and the oil begins to separate again. This is an important stage for tomatoes to develop their deep and rich flavor. At this point add a handful of cashews for a creamy taste and blend until it becomes a smooth, velvety sauce. Return the fish to the pan and add the cheese cubes and green peas. It's sprinkled with garam masala for a rich, fragrant finish and finished with a layer of heavy cream for a luscious, creamy texture.
