Pani Puri

Start by preparing the pani, the heart of the dish. In a bowl, mix 1 cup mint green chutney, 1/2 cup tamarind chutney, 1 tablespoon Chaat masala, 1/2 teaspoon cumin powder, 1/2 teaspoon red chilli powder and salt. Add 3-4 glasses of cold water slowly and adjust the spices and salt according to your taste. The mixture should have the right balance between spicy, tangy and sweet. Place the panini in the refrigerator to cool.
Next, prepare your assembly station. Take the puri and gently make a small hole in the center of each puri with your thumb or spoon. Be careful not to break them. Add a spoonful of mashed potatoes and cooked chickpeas to each bowl. Add some chopped onion on top.
Now it's time to put everything together. Dip each puri filling into the chilled pani for a few minutes and let it absorb the flavour. Remove and place on a plate.
